Joe & Co X Boli Knife Selvedge Denim Knife

Joe & Co teamed up with Boli Knife for a very special handmade denim knife collaboration. The knife is a chef’s kitchen version, a Santoku style 7”. The knife is constructed out of a high carbon 8670 Ground Flat Stock steel. The carbon will develop a patina over time.

Japanese Selvedge Denim Fabric Handle

The handle of the collaboration knife is made of Japanese raw selvedge denim fabric with red and white ID. This handle is treated with three layers of food-safe Danish oil, so extra protected, and it will last a decade or two. To extend it’s lifetime, it’s better not to put the knife in a dishwasher.

The Santoku Style

The Santoku knife originates from Japan. With a blade typically between 13 and 20 cm long, and a flat edge and a sheepsfoot blade that curves in an angle approaching 60 degrees at the point. The word may refer to the wide variety of ingredients that a Santoku knife can handle: meat, fish, and vegetables, or to the tasks it can perform: slicing, chopping, and dicing, either interpretation indicating a multi-use, general-purpose kitchen knife.

The Santoku’s blade and handle are designed to work in harmony by matching the blade’s width and weight to the weight of blade tang and handle, as with the original Japanese Santoku.
